Homemade baked Mac n Cheese
So I'm one for making things fresh and not out the box so my son's favorite thing for me to make is Homemade baked Mac n Cheese.
So here we go lets see how I make it!!
What you will need is:
* elbow macaroni(I use a whole box)
* 1/2 teaspoon black pepper
* A few dashes paprika
* 1/2 cup milk
*2 1/2 cups shredded Cheddar cheese or Half a block cheddar cheese
*1/2 cup Bread crumbs
Make sure you pre heat then oven to 350
Step 1

I save bread when it drys out and bake it and save it so I made my bread crumbs for this one..I don't do it all the time
After there done
Start adding the cheese in & the milk and pepper and etc
Put in a baking dish and top off with some parsley and you bread crumbs
Now time to put in the oven and bake for about 10-15 mins and now you and your family can enjoy!!!!

Carne Asada Burritos
This is one my fav things to eat!!!! Mmmm Mmmm soooo good!!
I'm going to show step by step in pictures! I hope you guys will enjoy this as much as my family does!!!
Ingredients: Carne Asada Burritos:
Carne Asada Meat
Pico De Gallo
Guacamole
salsa verda
Large flour tortillas
cooking oil ( I like olive oil for this )

1st get the Carne Asada on a pan and add a bit of oil
After it's all done cooking get your Large flour tortillas on a plate and warm up for about 30sec and place meat on the tortilla and now you can top off with
Pico De Gallo
Guacamole (I used a premade one)
I also like to add salsa verda
and roll it up and now you can enjoy!!!
Here's the recipe to for Pico De Gallo:
2 tomatoes ( small dice )
1/2 onion ( small dice ) ( red or white is best )
1/4 cup fresh cilantro ( small chop )
1/2 lemon ( just the juice )
1/3 teas. salt
1/4 teas. pepper
What to do:
Add all ingredients into a bowl and mix well. Cover and refrigerate.
Note: The salt will begin to extract the liquid out of the vegetables which is exactly what you want, just be sure to stir occasionally.
Now that looks soooo good!!!!!!!

4th Of July Flag Cake
I always make this on 4th of July!!
It is very easy
What to do:
Get some Betty Crocker cake mix and make to how the box says
After your cake is cooled top of with Cool Whip and make your flag from strawberrys and blueberrys
It's so light just wonderful after having dinner!!!
4th of July Pancakes
I'm that mom that loves to do fun things for my son!
So 4th of July(2011) I made flag pancakes!
What you need to do:
make the batter of pancakes how you would and put some of the mix in 3 bowls
after you have your 3 bowls with pancake mix add some red food coloring to one bowl like 3-5 drops
do the same for the blue and the other one just leave and make your pancakes and when done top one on top of each other and add your sugar free syrup and add some powered sugar and your all done and now you get to see your kids wooooo over them
Watermelon Lemonade

WATERMELON LEMONADE
2 Lemons, quartered
1 cup fresh mint leaves
1/2 cup packed light-brown sugar
1/2 medium seedless watermelon flesh cut into chunks.
Squeeze lemons into a large pitcher; add squeezed lemon quarters. Add mint and sugar; mash with a wooden spoon until mint is bruised and sugar is dissolved.
In a blender, puree watermelon in batches until smooth: pour through a fine-mesh sieve into a pitcher (you should have about 8 cups juice). Stir to combine. Serve over ice. Refrigerate covered for up to 3 days.
Enjoy!
**This would make delicious popsicles or slushees!! Yummy Yummy!

CROCK POT CHILI
Ingredients:
2 lbs. ground beef
1 large onion
1 large green pepper
1 large jalapeno pepper
Chili powder to taste
Garlic salt to taste
Salt to taste

Sugar to taste
2 cans crushed tomatoes
1 can tomato puree
1 can kidney beans
2 cans chili hot beans
1 large onion

Directions:
1. Brown beef. Saute chopped onion and green pepper in grease. Mix beef, onion and green pepper. Add spices; let stand 1 hour.
2. Add tomatoes, tomato puree, beans; cook in crock pot for 8-10 hours.
Chicken Cutlets......
This is my twist on Chicken Cutlets.
Chicken Cutlets is tradition in my family , it is just usually tossed
in some egg and breadcrumbs. I wanted to make chicken cutlets one night, so I
decided to make it. I was completely blind going in on this cuz it was my 1st time making it
but my sweet baby Jesus. It was delicious!!
The Goods:
Boneless Chicken Breast
3 Eggs
Breadcrumbs
Lots of Lemons ( if wanted) I did not use it this time
Olive Oil
What to do now:
Coat the boneless chicken breast in some egg.
Then toss is around in the breadcrumbs to completely coat it. Set aside. Repeat for all your chicken.
Now heat up a pan with some olive oil.
Place in your chicken breasts in pan
and cook for 5-10 minutes.
Then turn over and cook for an additional 5-10 minutes.

Finish off by topping it with thin lemon slices and parsley flakes(if wanted)
Your sudden death will be totally worth it.
Place your cutlets on a paper towel lined plate to soak up any excess oil.
While your cutlets are soaking, squeeze the juice from half a lemon on the bottom of
a baking/casserole dish.then place in there so the bottom are getting the lemon too.
Then squeeze the other half onto the chicken. I had double the amount of chicken then what is
shown, so I cut up an additional lemon and used it as well.
Finish off by topping it with thin lemon slices and parsley flakes(if wanted)
Why does everything taste better with lemon? Seriously, everything.
It is the bacon of the fruit family.
I absolutely love lemon paired with chicken. It brings out so much
flavor

St.Pattys Mint Cookies
1.pouch (Betty Crocker sugar cookies mix)
2. 1/2 cup butter...softened
3. 1/4 to 1/2 teaspoon mint extract
4. 6 to 8 drops green good coloring
5. 1 egg
6. 1 cup creme de menthe baking chips
7. 1 cup semisweet chocolate
WHAT DO DO:
1. heat oven to 350
2. In large bow;, stir in cookies mix, butter, extract, food coloring, egg till soft dough forms, stir in creme and chocolate chunks
3. Using a small cookie scoop drop dough on ungreased baking sheet
4. Bake 8 to 10 mins
5. Cool for 3 mins, remove from sheet serve cool or warm

Macho Nachos
INGREDIENTS:
- 1 CAN REFRIED BEANS (OPTIONAL)
- 1 large bag of tortilla chips
- 1 med onion chopped and cilantro
- 1 can chili
- 1 1/2 cups of mex shredded cheese
- 1 cup sour cream (opitionl)
- 1 cup green onion
- 1 tomato diced
- 1 jalapeno (optional) I didn't add this in cuz my son
- DIRECTIONS:
Have all ingredients prepared and ready to make nachos. Pre-heat oven to 350.in small pan heat up the beens untill they are loose enouth to spoon onto the nachos. On large tray (oven safe) Place the chips on the bottom and then the beans,chili,sour cream cheese,onion,tamato and etc.....Bake till cheese is melted!!!!
